Keeping Quality of Rabbit Meat Floss Prepared with Different Oils and Stored in Three Packaging Materials

Meat floss is a dehydrated ready-to-eat meat product most commonly produced from beef. Due to increasing consumer awareness about health, there interest in healthier alternatives like rabbit meat. In this study, was using three cooking oils: Refined Palm Oil (RPO), Soya (SO) and Canola (CO). The iodine number of each the oil types determined before use. resulting Rabbit Floss (RMF) packed materials: Aluminium Foil (AF), Ziploc (ZPL) Polypropylene (PP). RMF were stored at room temperature analysed for sensory properties Thiobarbituric acid reactive substances (TBARS) on days 7, 14 21 storage. study 3 by factorial experiment fitted into completely randomised design replicated times. refined RFO had highest (81.05), CO least (69.57). Following interactions among storage days, type packaging material, TBARS significantly (P<0.05) day 7 ZPL (8.44mgMDA/Kg). SO AF lowest Day (2.57mgMDA/Kg). There no significant differences throughout experimental period.
